Dunlin Bar Guest Shifts 2024

The Dunlin Bar is located at Meraner Straße 6 in the heart of Innsbruck, which will very soon be the venue for the 2024 “Dunlin Bar Guest Shifts” series.

But what does the concept of guest shifts mean?
Guest shifts or takeovers represent an extraordinary opportunity: The Dunlin Bar invites nationally and internationally renowned bars, bartenders and chefs for a joint event.
The goal: to provide guests with unforgettable evenings with extravagant concepts from around the world.

First things first: who or what is a Dunlin?
The answer is: a migratory bird. Accordingly, the dunlin travels a lot, bringing back only the best and tastiest souvenirs from its travels.
It combines, so to speak, the feeling of home with that of wanderlust.

A concept to which the team consisting of Kostas Karvounis, David Barbist, Corina Tschallener and Lena Fuchs are committed.
And this is based on a regional and holistic processing approach to the products as well as on international exchange with the top bars of the world.

The focus of their culinary creations is on products that are intended to be consumed completely. The team strives to source locally and sustainably, utilizing the full potential of the fruit and vegetables.
In addition to wine, cocktails and other drinks, they use the leftovers for fruit leather, for re-distilling and infusing spirits, and to create a variety of bar food.

In collaboration with local farmers and by processing the so-called “leftovers,” the four have produced a variety of cocktails, non-alcoholic drinks, and even their own wine from one product.

Since opening in June 2020, they have been working constantly to amaze their guests with their creative skills.

In the “5 Questions to…” section, Head Barkeeper Kostas Karvounis tells us more about the philosophy of the Dunlin Bar and why the principle of international cooperation is so important to them:

1) Your bar is an experience for all the senses – how should people feel after visiting your bar?
Since our concept is not commonplace and there is nothing comparable in the city,
It is very important to us that people go home satisfied and that we
brought our cocktail culture a little closer.

2) Do you also draw inspiration from other European bars when creating your drinks?
We are in contact with European and internationally successful bars to
Through collaboration and exchange, we gain new inspiration and ideas through internships. We are also inspired to create new concepts, unusual cocktails, and a different perspective on things like hospitality.
For example, our David spent three weeks at Sips in Barcelona (currently ranked No. 1 among the 50 Best Bars in the World) in 2022, and last year at Line in Athens (currently ranked No. 12). Such experiences are very important to us.

3) Why do you believe in the concept of guest shifts and what do these collaborations mean to you?
This concept has already been successfully tested. And thanks to the fact that we now have a very sophisticated cocktail and bar culture here in Innsbruck, it has been very well received, and demand is constantly growing.

4) How do you select your guest mixologists?
The guest bartenders/mixologists/bars should have an unusual concept in their bars and establishments, which they should of course present to our guests and then also to us.

6) You have already offered several pairing menus with top chefs – what have been your experiences with them so far and what can visitors look forward to this year?
The food pairing has also been very well received. It's usually associated with wine pairing, but not with cocktails. We've already planned a few things for this year, and I can only say it will be worth a visit.
